Ahhh — The Smell is in the air ..
No , not Lobster Bait but something much more pleasant or at least I think so . The smell of Christmas baking, it is that time when many families are full into their annual baking for the BIG Day . If it last that long ..hehe . As a kid I can remember my late Mom would bake Shortbread Cookies , silky smooth texture and so so Sweet , I can close my eyes now and just picture them melting in my mouth , yum.
My late mom and Grandmother would sometime join forces to make War Cake ! It’s an eggless cake that was developed by cooks during the war when eggs, butter, and milk were rationed so the cooks would have to be resourceful . It is a traditional Christmas cake here in this part of Western Nova Scotia and The Tri- Counties .In my Family it was Served with a nice big hunk of Cheddar cheese and a hot cup of tea, a true holiday treat for those that like it !

Another one that brings back many childhood memories for me is Gumdrop Cake , yes another sweet and delectable goodie to have over the Holidays , but watch out! there are times when making it that the Gumdrops fall to the bottom of the cake Pan . Never want that to happen but it does.

There are many delicious cake ideas for your families holiday baking including the ever famous Christmas Fruitcake , everyone seems to make it as bit differently adding their own touch to the taste and ingredients. there are those who like it and those who Do Not ! Personally ,I was never a big fan of Fruitcake .
How OLD can a a fruitcake be and would you dare eat it ? ..lol .. well the fruitcake left behind in Antarctica by the explorer Robert Falcon Scott in 1910 ” That’s pretty old”. But the honor for the oldest known existing fruitcake goes to one that was baked in 1878 when Rutherford B. Hayes was president of the United States. It makes me wonder just how much booze is soaked in them to still make the edible .

When it comes to Holiday baking the items are almost endless and only limited to ones imagination or families belly’s.
