I couldn’t help but notice on social media lately the posting of Rhubarb Photo’s. It’s the beginning of ” Rhubarb Season ”
This takes me back to my childhood , remembering the massive Rhubarb patch my dad grew , the pies, muffins and deserts my mom would make from it or We as kids dipping a stick in sugar to kill the bitterness and crunching to see wo made ” the Face ” first .
Is Rhubarb a Fruit or Vegetable ?
Botanically it’s a vegetable.
In the late 1940’s , the United States gave it a legal designation as a fruit to avoid the high tariffs put on on imported vegetables.
If you find Rhubarb to be extremely sour ,your right it is !
The Malic Acid and Oxalic Acid in it makes it sour.
I can remember My dear old Dad saying ” If you Grow Rhubarb in the dark it will be less sour ”
I /We never did try to grow it in the dark so I can’t say if it works .
Remember to eat the Rhubarb stems and NOT The Leaves !
The Rhubarb Leaves contain lots of Oxalic Acid, much more than in the stocks.
There is another compound found in the Leaves called anthraquinone glycosides that makes the leaves Poisonous .
( Death can occur from eating Rhubarb Leaves , you have to eat a lot of them . I’m sure you will become sick first so just DO NOT EAT THE LEAVES )
