Some days I think my true age is a retired lady who likes to putter who kitchen. I love meal prepping and making things EASY. And that’s why I love my slow cooker! I use it all winter long! From soups to pulled pork to chicken for fajita’s, my slow cooker gets quite a workout all winter long!
Here are a few of my favourite things to make:
1) Broth
MMMmmm, golden rich broth is the lifeblood of a good soup and I love using the slow cooker for cooking off chicken bones to turn it into broth. This one is so easy, I don’t even need to link a recipe (but I will)! My only real suggestion is just to let it keep simmering in the slow cooker until your house smells like a big ‘ol pot of Chicken Soup! Yum Yum!
2) Soup
Ok, we have our broth, how about a bowl of soup now! The possibilities are endless, but I’m a fan of all soups but my favourite one has to be a Broccoli Cheddar. It’s a comfort food for me in the winter! Creamy, cheesy, yummy! Can’t get enought!
3) Pulled Pork
Also so easy! I mean, that’s the point of a slow cooker, to make things easy! Pick up a nice pork shoulder, maybe from your local butcher and with some spices and liquid to keep it moist and you’ve got a great easy meal! I’ve even added wood chips (soaked, wrapped in foil) to the bottom of my slow cooker to give the meat a nice smoke taste! Cherry wood seems to have worked the best.
4) Fajita’s
I love using boneless chicken thighs and adding a whole bunch of seasoning in with some liquid. You can even throw your onions and peppers in too to get them cooked for fajita night! This dish is great because you can add basically whatever you want in a build your own fashion with extra’s. Lettuce, mushrooms, salsa, etc! If you want it, add it on, if not then skip it. Each person makes their own!
5) Whole Chicken
This is legit a set it up and leave it alone dish. And the chicken is fall of the bone moist and delicious! Just add in some onion, garlic and spices and you have yourself an easy meal. The only thing to watch is to make sure you buy a chicken that will fit your slow cooker! Too big and you’re going to end up having to use the oven instead.
